Aachen, Germany: Veal and Mushrooms

Recipe:  Kalbsgeschnetzelbes Mit Haunch Champignons (Veal with Mushrooms)

Kalbsgeschnetzelbes Mit Haunch Champignons Recipe (serves 4-6)

2 1/2 lbs of veal (1/2 lb per person, 200 to 250 gr per person)
2 creme fraiche (5 oz each, or 2 cups)
1 cup of sour cream
4 cups of button mushrooms cut into 4 pieces (do not wash mushrooms so they don’t become soggy – scrape dirt with a knife)
1 chopped white onion
1/2 lb of peeled potatoes per person
2 lbs of sliced carrots
1 head of broccoli
1 cup of creme fraiche
1 cup white wine
3 tablespoons of salt
2 cups EVOO
2 tablespoons sugar
2 teaspoons ground pepper
1/2 teaspoon paprika
a handful of thyme
1 rosemary stick
1 tablespoon cornmeal
parsley for decoration

Cut veal in small pieces. Wash and boil the potatoes with one tablespoon of salt and a pinch of sugar until soft (about 1/2 hr). Heat a large pan with 1/2 cup of EVOO, add sliced meat and let each side brown for about 2 minutes before turning it. After browning it, let it cook for another 7 minutes until brown and dry.
In another heated pan add 1/2 cup of EVOO. Add the chopped carrots and stir fry them. Add 2 tablespoons of sugar, 1 tablespoon of salt and 1 teaspoon ground pepper. Cook for about 7 minutes and remove from pan.
Place broccoli flowers on a heated pan, add 1 cup of water and 1 tablespoon of salt, cover pan and let it cook until tender.
While the broccoli is cooking, add 1 teaspoon of salt to the veal, a small teaspoon of ground pepper, 1/2 teaspoon of paprika and 1/3 cup of EVOO. Mix it well and remove from pan.
On the same pan, add 1/3 cup of EVOO, add onion and let it brown. Add the mushrooms, 1/2 teaspoon of salt, and the chopped herbs to taste. Mix it well and add meat back into the pan. Add 1 cup of white wine and the sour cream, mix it well. After 2 minutes add 1 cup of creme fraiche, 1 teaspoon of sugar and let it simmer for about 10 minutes.
Take broccoli out when it’s tender.
When the potatoes are ready, drain them and remove from pan.
Take the meat out of the pan (and leave the sauce on the pan), add 1 tablespoon of corn meal to the sauce (to thicken it), mix for about a minute and add the sauce to the meat bowl. Serve with broccoli and potatoes on the side.
