Chinese Boiled Peanuts and Celery & Spicy Boiled Soybean Recipes


Peanut and Celery Salad Recipe – Cold Dish

1 1/2 cups of raw peanut
8 cups of water
2 tablespoons soy sauce
2 teaspoons Chinese pepper
4 teaspoons salt
2 teaspoons sugar
2 teaspoons chopped dry anise (or 4 stars)
8 celery stalk
4 tablespoons sesame oil

Rinse raw peanuts in cold water, boil 3 cups of water in a small pan and add the anise, Chinese pepper, salt, sugar, soy sauce and the peanuts. You may also put the pepper and anise in a small cloth bag and add to the bowl in order to make it easier to separate the peanut from the spices after it cooks. Let it boil for 15-20 minutes, depending on how soft you like the peanuts. Meanwhile, cut the celery stalk in half and chop it in one inch pieces. In another pan boil 5 cups of water and add chopped celery, let it cook for 2 minutes and remove from pan. Rinse the celery in cold water in order for it to stop cooking and set it aside. When the peanut is cooked, place celery in a bowl and add peanuts (without the spices). Add 2 tablespoons of water from the peanut pot and 4 tablespoons sesame oil. Mix it well and serve it, you can also serve this dish cold.

Spicy Soybeans Recipe – Cold Dish

5 cups of water
3 cups soy beans
2 teaspoons chopped dry anise (or 2 stars)
4 teaspoons Chinese pepper
4 tablespoons salt

Boil 5 cups of water. Cut both tips of each bean out and rinse it. When the water is boiling, add the anise, Chinese pepper, salt and soy beans, let it cook for 3-5 minutes (if you like it soft, boil for 5-7 minutes). Remove beans from pot and keep the boiled water. Immediately wash beans with cold water to preserve the green color. Meanwhile, place the pot (with the water still inside) inside a big bowl of iced water to cool down. Once the water inside the pot is cooled, place the beans back into the pot and leave it in the refrigerator for 2 hours. Remove from the water and serve.
