Feijoada Recipe (See Farofa ingredients below)                       Printer Friendly Version

Ingredients:
2 lbs of black beans
2 bay leaves
3 sliced onions
5-6 slices peppered bacon
21 seasons blend
sea salt
1 1/2 cups of sliced ham
2 lbs of pork ribs
12 garlic cloves
4 chopped green onions
4 sliced Portuguese sausages (also known as linguiça)

Directions:
Prepare black beans a day in advance: rinse the black beans a couple of times, and put it a large bowl filled with cold water. Let it soak overnight.

The next day put the black beans in a pot with 2 bay leaves, in a conventional pot it will take 4-5 hours to cook, but if you use a pressure cooker it takes about 5-10 minutes from the time that the pressure cooker starts to whistle.

When the beans are cooked, warm the pot, heating evenly with olive oil, add the bacon, add the onions and stir for a couple of minutes, add the sausage and continually stir until fully cooked. Add the pork. While the pork cooks, on a separate bowl, smash 10% of the beans a few times to naturally thicken the broth. Check on the ribs, when they’re golden brown, add the beans, the garlic, a few pinches of the 21 seasoning, a few pinches of salt and the green onions, mix them well.
