Recipe: Sweet and Sour Pork Chops

Sweet and Sour Pork Chops Dish

Ingredients:
2 lbs of chopped pork ribs
4 teaspoons powdered Chinese pepper
2 teaspoons chopped anise
1 inch chopped ginger
1/4 cup scallions
1/4 cup water
4 tablespoons of Wangzhihe wine (or any rice wine)
3/4 cup soy sauce
1 teaspoon sugar
4 cups of flour
2 cups vegetable or peanut oil
2 tablespoons vegetable or peanut oil
2 tablespoons chopped scallions (white part)
6 garlic cloves chopped
1/2 red pepper thinly sliced
1/2 green pepper thinly sliced

Sauce ingredients:
6 tablespoons corn starch
3 tablespoons sugar
1/2 cup balsamic vinegar
1/4 cup soy sauce
1 1/2 cup of water

Directions:
Place the chopped ribs on a bowl, add the ginger and scallions, 2 teaspoons Chinese pepper and sugar, 4 tablespoons of the rice wine, 1/3 of a cup of soy sauce and 3 tablespoons of water. Let it marinate for 2 hours in room temperature. After 2 hours, remove the ribs from the marinate and into a bowl. Place the marinate sauce in a small bowl and set it aside. Place 2 cups of flour in a plate and mix with three tablespoons of the marinate that you set aside. Roll each piece of rib on flour, then add remaining 2 cups of flour to another plate and roll each piece again on the flour.

Heat a wok pan with 2 cups of vegetable (or peanut) oil. When the oil is heated, add one layer of ribs and let it fry until golden and fully cooked (about 3 to 4 minutes depending on the size of rib pieces). Clean the wok pan and heat it again with the remaining 2 tablespoons vegetable (or peanut) oil, add the garlic and scallions. Stir and add the red and green pepper and the remaining 2 teaspoons of Chinese pepper. Mix it well and add the sauce (directions below), let it cook while mixing the sauce until thick. Add the fried ribs in the pan and mix thoroughly. Remove from the pan and serve. You may add chopped chives for presentation.
